LEMON BARS
Preheat to 350ºF Grease the foil & line a 9 x 13 pan
Crust
2 C. flour
2/3 C. powder sugar
1 T cornstarch
1 C butter
Mix dry, cut in butter
and pat into pan, bake for 20 min
Topping
2 C. sugar
4 eggs
½ C. lemon juice
2 tsp. grated lemon rind
½ tsp. baking powder
½ tsp. salt
Mix topping ingredients together.
Pour over crust. Bake 15 to 20 min more until set. Cool completely. Sift powdered sugar on top. Cut and store in refrigerator or cool sealed box.
